A lonely jar hanging around the cupboard.  <\/p>\n\n\n\n<p>&#8220;Winter is coming&#8221;, said the Jar, &#8220;We shall perform the winter tradition of fermentation.  Who shall come to the call?&#8221;<\/p>\n\n\n\n<p>The Cabbage exclained, &#8220;I will!&#8221;<\/p>\n\n\n\n<p>&#8220;Great!  Who else?&#8221;<\/p>\n\n\n\n<p>&#8220;I will!&#8221;, said the Salt&#8221;.<\/p>\n\n\n\n<p>&#8220;Perfect!  Then we need Bondo to help us into this tradition&#8230;.Bondo!!!!&#8221;<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/static.wixstatic.com\/media\/125daf_aff72bc3cd3b46d9bb39cce0063e308f~mv2_d_1392_1735_s_2.jpg\/v1\/fill\/w_740,h_922,al_c,q_90,usm_0.66_1.00_0.01\/125daf_aff72bc3cd3b46d9bb39cce0063e308f~mv2_d_1392_1735_s_2.jpg\" alt=\"\" width=\"410\" height=\"510\"\/><\/figure><\/div>\n\n\n\n<p><strong>Easy sauerkraut recipe<\/strong><\/p>\n\n\n\n<p><strong>Equipment:<\/strong><\/p>\n\n\n\n<ul><li>cutting board<\/li><li>knife<\/li><li>large bowl to mix and massage the cabbage<\/li><li>cabbage 500g<\/li><li>scale to measure the cabbage and salt<\/li><li>salt (sea or Himalaya recommended)<\/li><li>large, clean, 3+ liter jar with a wide opening.  (Fermenting jars)<\/li><\/ul>\n\n\n\n<p><strong>Steps:<\/strong><\/p>\n\n\n\n<p>Easy to remember. 2% salt.  500g x 2% = 10g of salt<\/p>\n\n\n\n<ol><li>Wash and dry jar<\/li><li>Weight the bowl  or zero out the scale<\/li><li>Peel the first 2 layers of the cabbage<\/li><li>Cut cabbage in quarters and remove core<\/li><li>Shred small strips of cabbage and put onto the large bowl<\/li><li>Weight cabbage from the bowl<\/li><li>To measure how much salt you will need, use the formula above cabbage in grams multiplied by 0.02.<\/li><li>Measure the amount of salt and add to bowl of shredded cabbage.<\/li><li>Fun part begins&#8230;.massage, mix, and squeeze the salt and cabbage together.  Cabbage juices will start to accumulate.<\/li><li>Massage for 10minutes until the salt, cabbage, and juices are fully mixed.<\/li><li>Fill the jar with the mixture until 3\/4 full.  push down the cabbage and juices should be on top of the cabbage.  <\/li><li>Close the jar and place in a corner of your kitchen.  Best in a cool and dark corner.  <\/li><li>Let it ferment for 1-2 weeks.
