Melted Mozzarella and Tomato Bruschetta

Finally home. Hanging my spurs. Once again…. my fridge and I… are having aonther long winded conversation.

“Bondo is hungry.”

Fridge answers, “Really??? Here I am. Waiting for you all day. Alone. Keeping things cool. You, out all day. You expect me to cook for you? Why don’t you just make something easy and delicious.”

If there was a time, just wave my hand. Cast a spell. Delicious food would appear. But this is not a movie or in fantasy land.

“I will make a bruschetta.”



Preparation time: 10 minutes

Cooking time: 4-5 minutes

Total time to serving: 15 minutes


Ingredients (the quantity is at your discretion can be more or less) :

Tomato Topping:

  • 1-3 small cloves of minced garlic
  • 30 cherry tomatoes
  • 4-6 large leaves of basil
  • Salt and pepper to taste
  • Virgin olive oil drizzle as topping

Bruschetta:

  • 1 large baguette
  • 16 oz shredded Mozzarella

Steps:

  1. Cut tomatoes in quarters onto a bowl
  2. Add peel and mince garlic
  3. Add chopped basil
  4. Add salt and pepper to taste
  5. Mix and put aside
  6. Slice baguette diagonally (approx: 12 pieces)
  7. Place onto a baking sheet
  8. Set oven to broil and toast until golden brown (2-3 minutes). Remove from oven
  9. Turn over the slices, add mozzarella
  10. Return to oven. Toast until mozzarella cheese is melted (2-4 minutes) and remove
  11. While warm, add tomato topping
  12. drizzle with olive oil

Serve immediately
