After waking up to a nice sunny Sunday morning. With fresh steaming hot coffee in hand. Sipping and smelling the wonderful coffee aroma, my stomach started to rumble and grumble….like a baby telling me…..
“Feed me Bondo!”
“I’m hungry!”
Rummaging inside fridge, pondering what to feed my hungry belly. Remembering last night’s pizza party with friends. There were plenty of left-over bell peppers, mushroom, diced ham, mixed cheeses and mozzarella, and corn.
Like a light bulb in those comedy movies or cartoons where a bright light bulb appears on top of one’s head. “CHEESY OMELETTE”

Ingredients (the quantity is at your discretion can be more or less) :
- 2 large eggs
- 6 – 8 bell pepper strips can be diced
- 2 large mushroom sliced
- 4 tablespoon diced ham
- 3 tablespoon sweet corn kernel
- 4 tablespoon of mixed cheeses (mozzarella, cheddar, Gouda, or Gruyere)
- Salt and ground black pepper to taste
- milk (optional)
Steps:
- In a medium bowl, beat 2 eggs with a pinch of salt and pepper.
- Add the remaining ingredients except for bell peppers. Optionally, add milk.
- Mix well and put aside.
- In a medium high temperature, large frying pan, 3-4 tablespoons of olive oil or butter.
- Once the oil or butter comes to temperature, fry bell peppers for 1 minute, stir twice.
- Lower temperature to medium low, bring in the egg omelette mixture.
- Cook to your liking. Either runny or hard. or until bottom is golden brown.
I like my omelette hard and toasty.
Server hot for breakfast, brunch, meal, or snack.
