Spanish Omelette (Torta)


Got hungry for omelette one evening. Raided my fridge. With luck, there were eggs, ham, and cheese. Plus, there were potatoes.

Perfect, Spanish Omelette it is!



Cooking Time: 30 minutes

Prep Time: 15 minutes

Servings: 4 to 6


Ingredients:

  • 8 large potatoes peeled and cut into strips
  • 2 medium diced onion
  • 4 eggs
  • 6 slices of ham
  • shredded cheese (mozzarella, Gruyere, Gouda, or pizza mix cheese)
  • salt and pepper to taste

Steps:

  1. In a deep frying pan set heat to medium, fry onion and potatoes until potatoes are cooked and soft
  2. Set aside and let it cool
  3. In a large bowl, beat 4 eggs. Season with salt and pepper
  4. Add cooked potatoes and mix well.
  5. In the deep frying pan set heat to low
  6. Add 1/2 of egg/potato mixture
  7. Spread mixture until the pan is covered
  8. Add layers of ham, cheese, and ham
  9. Add the remaining egg/potato mixture
  10. Spread over the ham and cheese layer
  11. Cover and cook for 7-10 minutes
  12. Using a plate, flip over and cook the other side for 7-10 minutes

Serve warm as appetizer or meal.
